Dave, a self-taught cook with an obsession for Southern heat, began experimenting with spice blends passed down through his family — refining, tweaking, perfecting. Word spread fast. By 2019, Dave was operating a pop-up out of a church parking lot in Harlem every Saturday — and people were lining up around the block.
